Summary: A Registered Dietitian Nutritionist and Director of School Nutrition opposes adding whole-fat milk to school nutrition programs. They argue that it will increase milk waste due to ordering requirements and create confusion regarding saturated fat disclosures in recipes.
As a Registered Dietitian Nutritionist and Director of School Nutrition with 25 years of experience, I do not agree that it is necessary to add whole-fat milk to the school nutrition program. Having so many milk choices can increase milk waste since milk cartons are ordered by the crate (50/crate). I also believe that it is misleading to our customers (students and their families) that we would not disclose the amount of saturated fat that is included in this milk. Would we disclose the saturated fat if school nutrition programs use whole-fat milk in recipes? That will be very confusing and cause more errors when creating and analyzing recipes.
